Gluten-Free Vegan Chocolate Cupcakes

After trying just about every boxed gf cake mix readily available in small town grocery stores and attempting to make it vegan and being highly unimpressed, I turned to the internet. I found this recipe to try...
I haven't tried anything since. It produced the most DELICIOUS CUPCAKES EVER. Even better than my gluten filled, animal product ridden cupcakes.

Cons:

  • Tons of types of flour (easily solved with a bulk food store)
  • Contains xantham gum
  • A little time consuming to make the batter


Pros:

  • Delicious
  • Look like regular cupcakes
  • Ooey, gooey and moist
  • Super chocolatey
  • Cannot tell that they are gluten free or vegan, let along both


These are now my favourite from-scratch cupcakes. /Cupcakes in general. This blog has a kazillion delightful things that taste great to even gluten eating palates, and I would totally recommend trying out some of the others (like the garlic breadsticks).
